In a wok heat the oil and fry the onion and garlic until soft.
Add the chicken and cook until browned, then add the curry paste, stir and cook for 2 minutes.
Stir in the tomatoes and lentils, bring to the boil and reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
Serve with boiled basmati rice.
Ingredients:
4 Chicken breasts - diced
400g tin Epicure Chopped Tomatoes
400g tin Epicure Bijoux Verts Lentils -drained
1 Red Onion -diced
3 Tbsp Curry Paste
2 Garlic Cloves -crushed
Olive Oil
Basmati rice - to serve 4
