Chilli Salmon Steak with Shiitake mushrooms

This salmon dish was very special because of the shiitake mushrooms and the soy sauce give it the oriental flavour.

Cooking Instructions:
1.Marinade the salmon steaks in garlic, ginger,spring onions and 1 tablespoon soy sauce for 30 minutes.
2.Remove the salmon from the marinade. Dry with kitchen towel.
3.Heat the olive oil in a large heavy base frying pan. Fry salmon steaks 5 minutes on each side. Turn at 1 minute interval.
4.Add in the crushed chilli flakes, mushrooms, soy sauce, sugar and the marinate.
5.Sizzle the sauce into a thick syrupy glaze. Season with salt and pepper. Serve hot with grilled cherry tomatoes, mashed potatoes and fresh broccoli.

2 tablespoon soy sauce
1/2 teaspoon Brown sugar
1/2 teaspoon crushed red chilli flakes
1 teaspoon chopped spring onions
3-4 shiitake mushrooms (sliced)
1 clove garlic (chopped)
1 teaspoon chopped ginger
2 tablespoon oil
Salt and pepper

White : Sauvignon Blanc
