Twice marinated spicy chicken

My brother in law's mum is Anglo Indian and has been teaching me how to cook authentic Indian cuiisine for the past two decades.
This dish, because of the marinating technique gives the chicken a succulent, soft texture and is bursting with flavours. It is a firm family favourite and really easy to make. No. of Servings:

Place the chicken in a glass bowl. Crush the garlic, finely chop the chillis, and stir into the chicken, along with the salt and ginger and lemon juice.
Marinate for four hours.
Finely chop the herbs and mix with the yogurt. Pour over the chicken and marinate for a further four hours.
When ready, place into a heat proof dish, cover loosely with foil and bake in the oven at 200oC for fifteen minutes. Turn off the heat and let it stand in the oven for abour eight minutes.
Serve with saffron rice and spicy tomato chutney.
