Cooking Instructions:
Preheat the oven to 200°C/fan180°C/gas 6.

Put the chicken, onion and stock in a pan. Bring the stock to a simmer and poach the chicken for 5-10 minutes, until cooked through. Remove the chicken, reserve the stock.

Meanwhile, put the leeks, carrot and celery and 200ml water in a deep, non-stick frying pan and cook for 5 minutes, until the water has evaporated. Add the oil, thyme and garlic and fry for 2-3 minutes, stirring. Stir in the flour, then gradually add the chicken stock and bubble for 7-8 minutes, until thickened. Remove from the heat and stir in the chicken, yogurt and mustard (if using). Season. Pour into an ovenproof serving dish.

Mix the crushed crackers with the feta and cheddar cheeses. Sprinkle over the chicken and vegetables.
Bake for 20 minutes until golden and bubbling.
Ingredients:
2 large chicken breasts, skinned and diced.
1 onion, roughly chopped.
2 leeks, sliced.
1 stick celery, sliced.
1 carrot, sliced.
500ml chicken stock.
1 tbsp olive oil.
1 tsp thyme.
1 clove garlic, crushed.
2 tbsp plain flour
100g 2% fat Greek yogurt
1 tsp Dijon mustard (optional)
100g feta cheese, crumbled.
50g cheddar, grated.
8 Wholegrain crackers, crushed.
Salt and pepper.
