Aubergine and Oignons Doux

Take 2 medium aubergines, slice and chop into 2mm wide pieces.
Take 1 large white sweet onion, chop into small pieces,
stir together.
Add to meduium baking tray.
Pour over 6 tbs olive oil, or more as desired.
Add salt and pepper as desired.
Roast in middle of warm oven preheated to 220/gas 6 for 30 mins.
Whilst roasting grate which ever hard tasty cheese you like.
When veg is ready take from oven, spread liberally creme fraiche over surface,and then sprinkle cheese on top,
put back in oven for a further 30 mins or until golden brown.
Serve on top of meat,chicken or fish (cooked),
