Meatloaf was one of the first things i learned to cook and, as it is so simple, and I've tried lots of variations. This one worked really well and seems perfect for the lead up to christmas.

I've never liked meatloaf thats been processed so much it cuts like Pate, and so this recipe intentionally leaves the meat rustic, more like a nice homemade beef burger!

Cooking Instructions:
Place the bread in a food processor and blast until it's turned to relatively small crumbs. peel the apple and and then shave the apple to its core using the peeler. Place the mince in a bowl and add the breadcrumbs, egg, cinnamon and apple shavings. now work through your fingers until all ingredients are mixed thoroughly.

Line the loafing tin with greased paper and fill with the pork mince, pressing down firmly so all corners of the tin are filled.

Place in the oven at around 375 for 80 minutes, then remove from oven take the meatloaf out of the tin. Leave to stand for ten minutes before slicing and serving.
500g Pork Mince
2 Teaspoons Cinnamon
1 Apple
1 Egg
2 slices of plain white bread
Food processor for the breadcrumbs
