Preparation (30 mins)
1) Chop the Garlic onion and carrot together very fine
2) Add the 2 stock cubes to 1 pint of hot water
3) Chop the chicken into fairly small pieces (about 1 inch cube or similar), then cover chicken in plain flour.

Cooking (1 hour 10 minutes)
1) Heat olive oil in a saucepan on a high flame and add the onion, garlic carrot mix and stir for 5 minutes.
2) Add the chicken to the saucepan and stir until chicken is browned.
3) Add the Chicken stock to the saucepan.
4) Add half of the white wine to the saucepan
5) Stir until boiling then turn down the flame to low and let simmer
6) Add the pine nuts to the saucepan and stir in.
7) leave to simmer for 30 minutes.
8) Add the rest of the wine and all of the olives (if the olives are in a juice then add 1/4 cup of the olive juice)
9) Simmer for another 30 minutes.
10) Slowly Mix in flour for desired consistency (Do this slowly as if not will get lumpy)

Best served with mashed potato and vegetable of choice

200g Pine nuts/kernels
300g pitted black olives
1 onion
1 carrot
6 cloves Garlic
1/2 bottle dry white wine
100g plain flour
2 chicken stock cubes
6 table spoons olive oil
Salt as required
