Chick Pea and Squid salad

Cooking Instructions:
Heat the oil in a frying pan then add the onion and cook gently for 5 minutes until soft but not brown. Add the garlic and chilli and fry for a further minute. Add the chick peas and stir until warmed through. Mix in the coriander and half of the lemon juice then remove from heat. Put in a bowl and leave to cool. Season to taste.
Now place the squid in the frying pan with a little more oil and cook gently for 2 to 3 minutes on each side.
Add the rocket and tomatoes to the chick pea mix and use your hands to coat the leaves. Pile onto a plate and put the cooked squid on top. Squeeze the rest of the lemon juice over the top.

2 shallots finely chopped
2 garlic cloves crushed
1/2 red chilli deseeded & finely chopped
Tin of Epicure chick peas
Juice of 1 lemon
handful of coriander leaves
Handful of rocket
4 cherry tomatoes finely chopped
seasalt
Black Pepper
Olive oil
