Baked Satay Chicken with Spinach Ricotta Cheese topping

This is an Indonesian spicy BBQ chicken recipe with peanut sauce.

Cooking Instructions:
1. Mix peanut butter, chilli, garlic shallots oil, soy sauce and lemon juice together. Place the ingredients in the blender and blend for 10 second until in a paste consistancy.

2. Spread the paste over the chicken fillets and leave to marinate for at least 30 minutes.

3. Place the chicken fillets in an oven proof dish and bake on Gas mark 6/200C for 30 minutes.

4. Blanch the spinach in boiling water for 1 minute. Drain. Place the spinach and ricotta cheese in a blender and blend to make the sauce. Heat the sauce in a pan.

5. Place the cooked chicken on a warm plate. Spoon over the Spinach ricotta cheese sauce and garnish with spring onions and chilli. This dish is best serve with satay potatoes with Parmesan crust.
2 chicken fillets
3 tbsp peanut butter
1 red chilli, chopped
1 clove garlic, chopped
2 shallots, chopped
1 tbsp cooking oil
1 tbsp soy sauce
1 tbsp lemon juice
1 handful spinach leaves
4 tbsp Ricotta cheese
1 red chilli (shredded for garnish)
1 tbsp Shredded spring onions (garnish)
Recommended Wine:
White : Chardonnay
