Butter Bean and Tomato Soup

Cooking Instructions:
Drain the beans and rinse thoroughly. Fry the onions in the butter until they are soft but not browned then add the beans and tomatoes. Season with salt and pepper and add the bay leaf. Bring to boil and simmer gently for 10 minutes.
Taste and add more seasoning if required (add sugar to sweeten). Remove the bay leaf and serve in a bowl garnished with the parsley (liquidize if you want a smoother consistency).
Try serving with garlic bread and a salad to make a complete meal.

850 ml Vegetable stock
1 x Bay leaf
2 x large onions chopped
25g of butter
450g of Tomatoes peeled and chopped (or 1 400g can of Epicure Tomatoes)
Sea salt
Freshly ground black pepper
A little sugar
Chopped Parsley
Vegetarian
