Cream of Haricot Bean Soup

Cooking Instructions:
Drain beans and rinse thoroughly. Fry the onion and garlic in the butter until soft but not browned. Add the stock and beans and simmer for 10 minutes. Remove from heat and liquidize then add the cream, sea salt and freshly ground pepper to taste. Reheat the soup but do not let it boil.
Serve sprinkled with chopped parsley.

1 x Can of Epicure Haricot Beans
1 x litre of Vegetable Stock
1 x Onion Chopped
2 x Cloves of Garlic crushed
25g of butter
150 ml of single cream
Sea salt
Freshly ground black pepper
2 tablespoons of chopped parsley
