Chick Pea Garlic and Mint Soup

Cooking Instructions:
Drain Chick Peas and rinse thoroughly. Put the peas in a saucepan and add water. Bring to boil and simmer for 10 minutes. Remove from heat and add garlic, mint, parsley and half of the oil then liquidize until smooth. Season with salt and pepper. Return to the heat and simmer gently.
While this is happening cut the bread into little cubes and fry in the remaining oil until golden brown.
Serve the soup sprinkled with the croutons.
Ingredients:
1 Can of Epicure Chick Peas
850ml of water
2 Cloves of Garlic crushed
Handful of mint (stalks removed)
Small handful of Parsley (chopped)
6 tablespoons of Olive Oil
Sea salt
Freshly Ground Black Pepper
2 slices of bread (crusts removed)
Vegetarian
