Lentil Soup with Garlic and Cumin

Cooking Instructions:
Drain and rinse lentils thoroughly. Add them to a saucepan along with the stock, half the onion, the tomato and the garlic. Bring to the boil and simmer gently for 10 minutes. Meanwhile, melt half the butter and fry the remaining onion until soft and golden. Remove the soup from the heat and liquidize then add the remaining butter and Cumin and season to taste.
Serve the soup with the fried onion as a garnish

1 Can of Epicure Lentils
1 litre of Vegetable stock
1 Onion chopped
1 tomato chopped
2 cloves of garlic crushed
25g of butter
1 to 2 teaspoons of ground Cumin
Sea salt
