One pan chicken, chorizo & orange

A beautiful Spanish inspired dish. Delicious with crusty bread and / or a green salad.
The fresh orange gives a lovely fresh, zesty flavour!

This is so easy!

pre-heat oven to 200c

Use a hob to oven dish to reduce washing up!

Heat the oil in the pan & briefly fry the chicken on either side to brown.

Whilst that\'s browning prep the other ingredients then throw them all in to the pan - so that\'s the potatoes (halved lengthways), chorizo chopped into half inch slices, the onion, garlic, thyme leaves, orange juice & orange zest, seasoning & a splash of wine. Toss them all in with the chicken ensuring everything is spread out to allow it to roast.

Pop it tin the oven for about 40 - 45 mins, giving everything a toss half way through to ensure the ingredients are evenly coated.
Ensure chicken is cooked through & skin is nice & crisp.
Serve immediately.
4 skin on chicken pieces - thigh or leg
1 red onion - roughly chopped
2 large handfuls of new potatoes - halved lengthways
1 orange - grate the rind & squeeze out the juice
2 cloves of garlic (thickly sliced)
1 chorizo ring
Thyme leaves
Olive oil
Salt & Pepper
Splash of red wine
