Heat 1 tbsp olive oil in a deep non-stick frying pan and add the pancetta.
Once browned, remove from the pan to a casserole dish.
Add another tbsp of oil to the frying pan along with the onion, carrot and garlic and fry for 5 minutes, or until softened.
Tip the contents of the frying pan into the casserole.
Pour half the stock into the frying pan and deglaze the pan.
Add the tomatoes, tomato purée and herbs to the frying pan. Once simmering pour the contents of the pan into the casserole, along with the cannellini beans and remaining stock.
Bring the contents of the casserole to the boil on the hob, stirring occasionally.
Turn down the heat and simmer the casserole for 20 minutes.
Add the cod and simmer for a further 10 minutes, until the cod is cooked through and opaque.
Serve with herbed mashed potato or warm crusty bread.

750g Cod, cut into chunks
1 tbsp Olive Oil
200g Smoked Pancetta
1 large Onion, sliced
4 Garlic Cloves, chopped
1 Carrot, diced
2 x 400g cans Cannellini Beans, drained and rinsed
450ml Fish or Vegetable Stock
1 tbsp Tomato Purée
1 x 400g can Chopped Tomatoes
2 Bay Leaves
