Tomato Cheese Paste

Background Info:
This is a late summer recipe, as you need a good crop of preferably homegrown tomatoes. Spread on crackers, or bread, or toast it is an absolutely delicious savoury treat. Ideal for picnics.

Cooking Instructions:
Cover the tomatoes with boiling water and after a few mins. remove the skins.
Chop the tomatoes and put in a medium sized pan over a low heat. As they start to dissolve, stir and add the remaining ingredients. Continue stirring until it starts to bubble, and let it simmer for a further five minutes. (Do not boil).
Transfer to a bowl and leave to cool, then put in fridge until required.
Ingredients:
1lb Tomatoes
3 oz Red cheese (Red Leicester or a good cheddar)
2 oz breadcrumbs
1 Egg
1 tsp. dry mustard powder
Salt and Pepper to taste
