A recipe that I use often, either for a light lunch, as a starter or as a side dish at a bbq

Peel cucumber, cut in half lengthways, scrape out seeds, cut into 1/2 inch thick slices. Peel onion, slice in half, cut into rings and have rings. Have pepper, de-seed and cut
into strips.
For the dressing@ stir wine vinegar and salt until salt is dissolved. Whisk oil until creamy, season with pepper and oregano. Pour dressing over veg about an hour before stirring. Serve with crispy bread rolls.
1 Cucumber
1lb 2oz Tomatoes
7 Feta Cheese, cubed
1 green pepper
1 red onion
pinch of salt
For dressing:
3tbsp wine vinegar
5tbsp olive oil
1tsp of fresh oregano or 1/2 tsp of dried oregano
