Cooking Instructions:
1. Boil a pan of water, add rice and cook for 15 mins. drain. Get the BBQ going.
2. put half the yogurt in a bowl with garam masala, garlic seasoning, cumin and half lemon juice, mix together. Add the lamb, red onion chunks and yellow pepper, mix well. Marinate for 5 mins.
3. thread the mixture onto skewers and put on the BBQ for apporx 5 mins till the lamb is cooked.
4. Put the sliced onion, fennel, carrot and lime juice in a bowl and toss. mix the rest of the yogurt and chopped mint. Serve
250g Basmati and wild rice
300g greek yogurt
2 tsp garlic, pepper and chilli seasoning
1/2 tsp garam masala
1/2 tsp ground cumin
2 tsp lime juice
350g lamb leg steaks, diced
2 red onions, 1 sliced and 1 chunked
1 yellow pepper chunked
1 fennel bulb sliced
2 carrots grated
30g mint leaves finely chopped
