One pumpkin goes a long way! Here's a quick, easy, healthy way to make lunchbox snacks from the leftover squash.

Cooking Instructions:
Heat oven to 200C. Line the muffin tin with cases.

Whisk the butter, sugar and honey. Add the eggs and pumpkin. Fold in the flour, bicarb. and spices. Finally, stir in the sultanas and divide between the muffin cases.

Bake in the oven for 12-15 minutes then cool in the tray. Try not to eat them all at once!
Ingredients:
115g softened unsalted butter
175g brown sugar
115g honey
225g cooked and mashed pumpkin
1 egg
200g plain flour
1 tsp bicarbonate of soda
1 1/2 tsp ground cinnamon
1 tsp grated nutmeg
50g sultanas
