Peel and boil potatoes in salted water for 20 minutes. Meanwhile, drain and rinse lentils. Heat 3 tablespoons of oil in a saucepan and add all of the vegetables and fry for 15 minutes until tender. Then add the lentils, herbs, tomato puree and season to taste. Grease a shallow oven proof dish with the remaining oil and then spoon in the lentil mixture.
Drain the potatoes and mash adding the butter.
Spread the mash roughly on top of the lentil mix and place in a pre-heated oven and bake for 30 to 40 minutes on 200ºc until golden brown.

I make a similar dish using a tin of aduki beans, instead of mash I put slices of boiled potatoes in top and brown under the grill, I call it Red Dragon Pie
1 Can of Epicure Lentils
1 large onion chopped
1 clove of garlic crushed
1 stick of celery finely chopped
1 large carrot diced
125g mushrooms chopped
4 tablespoons of vegetable oil
½ teaspoon of thyme
½ teaspoon of marjoram
1 tablespoon of tomato puree
700g of potatoes
25g of butter
Sea salt
Freshly ground black pepper
