I love to forage and use Autumn fruits for both savoury and sweet dishes. This sauce is great for bringing a delicious fruity lift to a meat dish and suits most game and red meats. I love it with venison, pheasant or pigeon .

Cooking Instructions:
Wash and de-stalk fruit.
Heat the wine in a pan and then add the blackberries & Elderberries, vinegar and stock .Cook on a low heat for about 10 minutes.
When the fruit has gone soft and the consistency is thicker, add the honey and stir.

Serve the sauce alongside your roast or pan-fried meat, and garnish with a few fresh berries.

Serve with Autumn vegetables ?field mushrooms, carrots and kale are delicious with celeriac and potato mash !

250ml meat stock
1 tablespoon balsamic vinegar
1 teaspoon honey
