In a large pan, cook the turkey over a medium heat until browned. season, add carrot, onion and garlic and cook a further 2-3 mins. stirring often. Add the sweet potatoes, stock, tomatoes, chilli powder, cumin and paprika and give a good stir. Cover and simmer for 40 mins until the potatoes are soft, stir occasionally to prevent sticking. season to taste. Stir in the kale until wilted. Garnish with fresh coriander. Serve with rice or baked potatoes.
1lb minced turkey
salt to taste
1 onion, chopped
3 carrots, peeled and chopped
3 cloves garlic, minced
2 medium sweet potatoes, peeled and cubed
1 can chopped tomatoes
180ml chicken stock
1/2 tsp chilli powder
1/2 tsp cumin
1/4 tsp smoked paprika
A handful of chopped kale
fresh coriander to garnish
