Chick Pea and Potato Croquettes

Cooking Instructions:
Drain and rinse Peas then place them in a bowl and mash roughly with a fork. Add the mashed potato, crushed garlic, paprika and parsley and mix together. Season with salt and pepper then form the mixture into croquettes and roll them in the flour. Dip the croquettes into the beaten egg and then into the dry breadcrumbs. Heat the oil in a frying pan and fry the croquettes for 2 to 3 minutes on each side until golden then drain onto kitchen paper.
Serve with mixed green salad or vegetables.
1 Can of Epicure Chick Peas
450g Potatoes cooked drained and mashed
1 clove of garlic crushed
½ teaspoon of paprika
2 tablespoons of chopped parsley
Sea salt
Freshly ground black pepper
Whole wheat flour
1 Egg beaten with one tablespoon of water
Vegetable oil for frying
