Cooking Instructions:
1. Crush the meringue nests until you have small pieces.

2. Weigh out half of the blackberries, and puree them in a blender. Strain to remove the pips.

3. Whip the double cream or whipping cream until you have stiff peaks, and fold in the pureed blackberries, whole blackberries, meringue pieces and rose syrup (if using).

4. Spoon the mixture into four chilled glasses or dessert bowls, and top with a sprig of mint before serving.
Ingredients:
500g of blackberries, washed
3 pre-made meringue nests (7.5cm diameter)
400ml double or whipping cream
Fresh mint to garnish
A dash of rose syrup (optional)
