Pre-heat the oven to 220ºc. Roll out the pastry and use it to line a 20cm flan dish. Prick the base of the flan then bake it in the oven for 15 minutes. Meanwhile, melt the butter in a medium sized saucepan and gently fry the onion, garlic and pepper for 10 minutes. Remove from the heat and add the tomatoes and basil. Drain and rinse the beans and add them to the filling then season with salt and pepper. Remove the flan from the oven and reduce the heat to 180ºc. Add the filling mixture to the hot flan case. In a separate bowl beat together the egg and milk, season with salt and pepper then poor it into the flan case. Bake for 40 to 50 minutes until set and golden
Ingredients:
1 can of Epicure Cannellini beans
1 pack of ready made shortcrust pastry
25g of butter
1 onion sliced
1 clove of garlic crushed
1 medium green pepper deseeded and sliced
2 tomatoes skinned and sliced
½ teaspoon of dried basil
Sea salt
Freshly ground black pepper
1 egg
150ml milk
Vegetariantick
