Curried Mung Dal

Drain and rinse the beans. Heat the oil in a medium sized saucepan and gently fry the onion and garlic for 10 minutes.
Add the Cumin, turmeric, chilli powder and cook for a further 2 to 3 minutes. Stir in the Mung Beans and season with salt and pepper. Simmer the mixture over a low heat stirring all of the time until the mix is well blended and piping hot.
Serve with cooked brown rice and a side salad.

1 can of Epicure Mung Beans
4 tablespoons of vegetable oil
1 large onion chopped
1 clove of garlic crushed
1 ½ teaspoons of ground cumin
1 ½ teaspoons of turmeric
½ teaspoon of chilli powder
Sea salt
Freshly ground black pepper
Vegetarian
