Background Info:
Falafel are croquettes made with chick peas and have been a staple in Middle Eastern countries for millennia. Traditionally they are deep fried, but as a healthier option these are baked. They are great as a snack or a side dish.

Falafels are brilliant and the healthy option of baking them doesn't alter the taste. You can also add shallow fried spinach to the mixture for a different twist.
1½ cups Chick Peas
½ cup bulgur wheat
¾ cup boiling water
1 medium red onion, finely chopped
2 cloves garlic, crushed
¼ tsp dried chilli flakes
1 tsp ground cumin
1 tsp ground coriander
2 tbsp lemon juice
1/3 cup breadcrumbs
2 tbsp chopped fresh coriander
2 tbsp chopped fresh parsley
olive oil spray
