Coat your crock pot with olive oil. Put your onion in the crock pot along with the spices and stir to coat it well in the spices. Add the rest of the ingredients in the first list and stir to mix it up. Cover and cook on low for 6 hours or until the sweet potatoes are cooked through.
15 minutes before it?s done, put in the coconut milk with salt & pepper and stir to combine well and thoroughly. Cook for 15 more minutes.
Serve right away on just-cooked rice.
2 Tbsp extra virgin olive oil
garlic powder, cayenne pepper, cinnamon, ground ginger, curry powder
4 stalks celery, chopped
1 small onion, chopped
1/3 head cabbage, shredded
½ cup carrots, chopped (I normally use baby carrots)
1 sweet potato, diced
1 apple, chopped
½ can chick peas, rinsed and drained
2-1/2 cups vegetable broth
To add later:
1/2 can light coconut milk
salt & pepper
