Cooking Instructions:
Chop the onion roughly and put into the bottom of the slow cooker along with the tin of chopped tomatoes.

Mix all of the herbs and spices in a large bowl then place the joint on top, rubbing the mixture into the skin all over.

Place the joint of pork on top of the onions.

Pour the red wine vinegar and hendersons relish on top of the pork.

Cook on high for 8 hours, spooning liquid from the bottom of the pot over the joint every 2 hours.

Remove from the slow cooker, remove the fat and pull the meat apart using two forks.

Works well in sandwiches, enchiladas and fajitas as well as a very special burger topping.
Ingredients:
1 large onion
1 Pork Shoulder joint
1tsp Mustard seeds
3 bay leaves
2tsp ground cumin
2tsp chilli powder
1tsp salt
ground pepper to taste
1tsp sage
2 cloves garlic, minced

3tbsp hendersons relish
3tbsp red wine vinegar

1 tin chopped tomatoes
