Chipotle Black Bean & Coriander Burgers

Preheat the oven to 170c

For the black bean burgers, dry the beans well after rinsing (any extra moisture will keep the burgers from holding together well). Put the beans into a medium bowl and mash them with a potato masher or a fork until thick and sticky.

In a food processor, combine the red pepper, sweet corn, coriander and garlic and pulse until finely chopped. Add the chickpea flour, egg, chipotle paste, cumin and salt and pepper and pulse/blitz a few times until mixed well.

Now fold the mixture into the mashed beans. Divide the mixture into four and then form them into patties (slightly oil your hands because it can become quite messy!). Put them onto a baking tray lined with greaseproof paper and then place them into the pre heated oven for 12 minutes or until they are firm to touch (at this stage you can either freeze and use at a later stage or continue below)
Now, place a frying pan on a low heat, add a good few lugs of olive oil and heat again, once hot start cooking the burgers until browned and crispy, about 6-8 minutes per side
Meanwhile cut the burger buns in half and toast them under a preheated grill (a couple of minutes each side or until nicely toasted). Now divide the sliced cheese into four and put them on top of each bean burger and place them under the grill and cook until the cheese is nicely melted.

To serve; place the burgers on the buns, followed by the sliced tomato and avocado then topped with a good handful of rocket and finished with a good smear of mayonnaise. ENJOY!
Ingredients:
Epicure Black beans x 1 tin (drained)
Medium white onion x 1 (finely diced)
Sweet corn x 200g (drained)
Ground cumin x ½ tsp
Olive oil x 1 good lug
Chipotle paste x 1 tbsp (available in most supermarkets)
Garlic clove x 1 (grated)
Egg yolk x 1
Fresh coriander x a good handful (roughly chopped)
Small red pepper x diced finely (deseeded)
Salt and ground black pepper x a good pinch of both
Chickpea flour x 2 tbsp
Brioche burger bun x 4
Cheddar cheese or red Leicester x 4 thick slices
Avocado x 1 cut into slices
Rocket x a good handful
Mayonnaise x 4 tbsp
Vine ripened tomato x 4 thick slices
